At Seabourn, their commitment to culinary excellence lies at the core of the ultra-luxury offerings. They have just introduced the latest milestone in our culinary evolution: Solis. An innovative Mediterranean fine dining concept inspired by the breathtaking destinations that the ships explore.

What is Seabourn’s Solis?

Solis has been artfully crafted to captivate all of your senses. Immersing you in the ambiance of volcanic slopes, azure waters, and flourishing citrus orchards. Through a series of enchanting culinary moments and delightful surprises. Anticipate inventive cocktails, vibrant presentations, and flavour pairings that harmonise the familiar. Plus, the elevated, all presented within a reimagined dining setting that evokes the mesmerising hues of a sun-kissed evening.

Who Produced Solis?

Solis was meticulously crafted through a collaborative effort involving the culinary expertise of Chef Anton Egger and Senior Corporate Chef Franck Salein, both celebrated for their Michelin-level mastery. Their shared passion for travel and deep understanding of Seabourn’s discerning guests have culminated in a menu that stands shoulder to shoulder with the world’s most prestigious dining establishments. Chef Egger, with a history of restaurant openings in destinations like Singapore and Bangkok. Chef Salein, known for his executive chef roles at numerous 2 and 3 Michelin-starred venues, are no strangers to many of you. They are the culinary visionaries responsible for two of Seabourn’s most beloved dining concepts — “Earth & Ocean” and “Sushi.”

Delectable Dishes

Solis will introduce an enticing array of dishes that mirror the rich tapestry of Mediterranean flavours. Its menus will feature a vibrant selection of dishes. All take inspiration from the culinary delights found along the Rivieras, the central Mediterranean, and the enticing Greek flavours of the eastern Mediterranean. Moreover, Solis will embrace the diverse and opulent culinary traditions of the many remarkable destinations Seabourn explores.

Sumptuous featured dishes include Piquillos De La Mama — Basque piquillo peppers with fresh Murcia goat milk cheese served on country bread crostini; Branzino — whole sea bass baked in a sea salt and fresh thyme crust served with artichokes and tomatoes; Bistecca Alla Fiorentina — Tuscan-style grilled beef porterhouse steak; and Spiced Lamb Shank — chargrilled smoked eggplant with tahini, pomegranate, roasted pine nuts, and labneh. A beautiful assortment of vegetarian and vegan options will also be incorporated throughout the menu.

Crafted Cocktails

In addition to the culinary delights, our guests partake in a truly sophisticated experience with Seabourn’s newly introduced vintage cocktail menu, which exudes an air of classic elegance. This meticulously crafted menu boasts a selection of timeless cocktails, each masterfully prepared to perfection. Whether it’s the classic Kir Royale, the enticing Mauresco, or the perennial favourite, the Aperol Spritz, the team of skilled mixologists takes great care to guarantee that every libation is a work of art, both in terms of flavour and presentation.

When Can You Enjoy Solis?

Solis will debut on board Seabourn Quest in January 2024. Solis is available across Seabourn Encore, Seabourn Ovation, and Seabourn Sojourn by Spring 2024.
